In the fall the grapes are pressed and a portion of the juice is stored fresh and fermented. Before bottling in the spring,we blend the unfermented juice which has retained its rich flavor,back into the dry wine. This results in the varietal fruit flavours components being combined with the developed wine, yielding a complex full-bodied wine.
