Vaqueros is an outpost of Southwestern cuisine in a city dominated by fried seafood, Creole delicacies and down-home cooking. The menu incorporates many of the characteristics of the local cuisine but allows for flashes of innovativeness in its treatment of southwestern fare. More than 17 chili peppers are used in the preparation of well-seasoned, but not overly spicy, dishes.
