The high latitutde provides extra-long summer days to ripen the grapes to optimum sweetness. Combined with the high altitude, the warm days are tempered by cool evenings. Sunny days ripen the grapes to full flavor and cool evenings retain fruit character and naturally high acidities.

The grape growing is concentrated along the Snake River, while wineries extend up into Idaho's northern panhandle.
